We got a pair of Muscovy ducks to help with bugs and mama duck was a very good mama, so we ended up with 8 ducks!
Then we added some Khaki Campbell ducks the following year to our mix and then some mixed unknown variety, so our flock is quite a nice size now. Duck eggs have thicker yolks and whites but are even bigger than our largest chicken eggs. They make for good eating--one of the really big Muscovy eggs is often enough for a meal. They are even better for baking, adding richness to everything from cookies to pancakes to pasta. Our clients say that duck eggs are also excellent for pickling!
Some people seem to be a little unsure about eating duck eggs, so if you have never tried them and want to, you can start with just a half dozen.
